Randy - Indian Night - a repeat of the indian menu I did for Odd Friday a while back.  A separate serving w/o peas for Rob.  Onions were cooked to death.  There are nuts, but they're toasted cashews.  One dessert option has dairy.  No meat.

 Sofia - Bean salad and corn chips (legumes but no regular onions, no nuts, no meat). Matt & Susan - (cold?) soup & bread  
Cleanup Exercise Radical Self-Reliance!  Silona will cleanup Sheilagh to clean up & would happily help cut/chop/cook if someone else has the brains for leading the meal  David will clean after supper Sean will clean up.   

 

Kitchen Equipment:

   Surely the people who've done this before have cookware they're willing to camp with...  although I can pack my kitchen if nobody steps up. --Randy

      If memory serves, Dave & Sof brought a box full of cookware last year. Also, I'm in touch with the lick n suck folks -- I'll ask them what they'll have available for us to use. maybe we can leave some stuff behind. --Matt

   I'm most likely going to subscribe to the "radical self-reliance" philosophy and bring kitchen stuff.  I don't know the lick n suck folks yet, and I'm not willing to assume they will meet my needs without also having a backup plan. --Randy

 We have cookware we will bring, but you should let me know what you need, in case you need to bring extra. That goes for others too I guess.. I can bring several cast iron skillets, a large pot, a medium pot, spoons and ladle and flipper. - Sofia

  It would be good to have your comal.  I'm making the corn fritter dough, so we'll have those corn fritters with Friday dinner.  Although the iron skillet can work.  --Randy

  I actually want breakfast Thursday morning, so I'm bringing what I need for breakfast for four.  --Randy

 

 

 

   Matt/Edwin, I have a 5 qt stock pot that needs one end of a handle welded back on.  Can one of you do that? --Randy

 

      Probably, but if it's stainless steel we'd need an inert gas welding rig or we'll blacken the metal really badly. And it's a little trickier to do. Edwin's worked with stainless a little bit; I just know the theory. You could also just drill a hole and attach it with short bolts; that might be quicker and easier. --Matt

    My first flipside had a big camp bowl of corn & blackbean salsa with a Sofia-appreciable level of avocado chunks.  The salsa kept the avocado green, even overnight.  Super yummy! --sheilagh

That's funny, I haven't made mac 'n' cheese since I became an Odd One -RZ

 

 -- would rather non-dairy options, if feasible, or warnings that whatever tasty food has dairy --sheilagh

Bel - no onions or walnuts

Randy - diabetes - need to focus on proteins (meat, cheese), good fats, and lo-carb veggies.  Sweet corn and potatos are not lo-carb veggies, btw.

Mindy - no raisins none none none ......  and I will be on the lots o protein side of the table as well, for similer reasons

 

Rob - no legumes

David - is vegetarian (eats cheese and eggs)

Susan - No uncooked nuts or uncooked onions

Marla - No Mammal

Corprew -- allergic to wheat.

Michelle - My list is disturbing. 

 

Everyone brings their own plates, bowls and utensils and cleans them

 

Drinks:

 

Everyone should bring their own water. (I would prefer not to make 3 trips again. - Silona)

 

Lemonade/Gatorade?

Last year I brought juice, which no one drank until we watered it down, and vitamin water which I brought mostly for myself but shared, and that was popular. -sofia

I'm bringing homemade juice for the breakfasts, there will probably be extra.  --Randy

 

Notes from 23-Feb meeting:

 

We should plan ahead for breakfasts and dinners, and just graze for lunch. There will be a sign-up on the Wiki so people can volunteer to cook one or more meals for the camp.

 

 

What kind of arrangements did you all have this last time? What improvements and/or changes would you like to see? What did you see others try that did or did NOT work? -- bel

 

In general food went well, but we had too much of it. We should also probably do a bit more advance meal planning. -- Tall Matt

 

Can you define "too much" and "bit more"? :> Was there group food planning along with personal food planning? Were any meals cooked? Was there a supply and equipment list where people signed up to bring things? -- bel

 

Silona was in charge of all the food; she did all the shopping and we reimbursed her. She did a great job, but we probably had 50% more food than we needed. Better to err on that side than running out, though! We planned some meals in advance -- breakfast was fairly well mapped out, lunch was mostly random sandwichy stuff, and as I recall the dinners were also planned somewhat. Most of the breakfasts and dinners were cooked. Lunches, less so. -- Tall Matt

 

I want to make Jerky! Turkey and Beef, unless someone can get me some other meat. I also want to look into makeing some sort of bread. Because that would be nifty to have fresh-made bread with a meal. -- Michelle

 

I'd say make the dough beforehand and freeze it. Biscuits would probably be the easiest to do. -- Tall Matt

There are easy ish flat breads and most quick breads can be cooked in a dutch oven, griddle cakes and such are very easy. One thing we used to do for SCA was make a freeze stew ingrdients for faster cooking on site, and set up night was always stone soup. -Mi

 

Some of the Indian recipes I've got could be done on-site (with some prep), if anybody's interested... -- Randy

 

Pre-Event Food Prep:

I now have a Jack Lalane Juicer and a Foodsaver thingie.  If someone needs to prep food ahead of time and vacuum-seal it, it's available. -- Randy

If anyone is preping food in Austin on Wednesday or Thursday, I'd be happy to help with cutting/mixing/support. --sheilagh
